Apple Ugly Cake.

INGREDIENTS

  • 400g white sugar
  • 375g plain flour
  • 9g baking soda
  • 10g salt
  • 5g ground cinnamon
  • 315ml vegetable oil
  • 2 eggs
  • 10ml vanilla extract
  • 80g raisins
  • 500g chopped, peeled apple




DIRECTIONS

  1. Preheat the oven to 325 F / 165 C / Gas mark 3.
  2. Grease a 9×13 inch baking tray.
  3. In a large bowl stir together the sugar, flour, baking soda, salt, and cinnamon. Make a well in the center, and pour in the oil, eggs and vanilla.
  4. Mix until well blended then fold in the raisins and apples.
  5. Spread evenly in the prepared pan.
  6. Bake for 1 ½ hours in the preheated oven, until firm and lightly browned.
  7. Allow to cool then cut into squares or rectangles and remove from tin.
