Broccoli Soup.



 PREP & COOK TIME  12 - 15 Min

 SERVES  2 - 4

INGREDIENTS

  • 200g / 7oz broccoli florets
  • 250ml / 8¾ fl oz chicken or vegetable stock (more if necessary)
  • 1 tbsp olive oil
  • 1 garlic clove (or a small onion if preferred), peeled and chopped
  • salt and freshly ground black pepper to season
  • a drizzle of cream, to serve (optional but yummy!)




DIRECTIONS

  1. Heat the oil in a saucepan and sauté (that's lightly fry for us beginners!) the garlic (or onion) for 1-2 minutes.
  2. Pour the stock into the pan and add the broccoli florets.
  3. Bring to the boil and reduce the heat and simmer gently for 10-12 minutes, until the broccoli is tender.
  4. Season with the salt and pepper to taste, then transfer to a liquidiser or blender.
  5. Making sure that the top is secure, whiz the stock & broccoli until smooth.
  6. Ladle the soup into serving bowls and drizzle with a little cream to serve.

    Serve with a fresh bread roll and butter, breadsticks, croutons (see Homemade Croutons page) or just as it is.
