Make a rich tomato sauce by cooking slowly in olive oil the tomatoes, garlic, basil and salt and pepper. Reduce until you have a very thick and rich sauce.
Fry the bacon, mushrooms and peppers (plus any extras you may wish to add).
Cover the top of the pitas with the tomato sauce.
Pile on the mushrooms, bacon etc and then grate the cheese over the top.
Place under a medium grill for 6-7 minutes (until the cheese has melted).
