INGREDIENTS
- 600g fresh rhubarb
(or 2 tins of canned rhubarb)
- 2 medium "eating" apples
- 300g ready made crumble mix
- 400ml water
(200ml if using canned rhubarb)
- 2 tablespoons sugar
(1 tablespoon if using canned rhubarb)
(vary for sweeter / sharper taste)
DIRECTIONS
- Preheat oven to 350 F / 180 C / Gas mark 4.
- Rinse the rhubarb and apples. Slice the apples and remove the cores (you could peel them if you wish, but the skin gives added texture) and place into a 9 inch (23 cm) diameter ovenproof dish that is at least 3 inch (7.5 cm) deep (Denise uses a glass casserole dish without the lid).
- Chop the rhubarb into 1 inch chunks and mix in with the apple (or open the tins and add the contents).
- Sprinkle the sugar over the rhubarb and apples then pour over the water.
- Layer the ready made crumble mix over the top, you want to cover all the fruit as evenly as possible.
- Cook in the preheated oven for 30 to 40 minutes until the top is golden brown
- Serve hot or cold with custard or cream.
